Non-dairy Bechamel (Creamy) Sauce - Also Gluten-free!

4 T. EVOO
1 small onion, finely chopped
1 clove garlic, minced
6 T. brown rice flour
1 c. original Rice Dream rice milk
1/2 c. water
1/2 t. sea salt
1/4 t. dried dill
pinch white pepper
optional splash or white wine

In heavy sausepan, over low flame, saute onion and garlic in oil till soft and translucent. Sprinkle in flour and stir frequently for 5 minutes. Slowly add rice milk, water, and seasonings. Whisk till well blended. Increase heat and bring briefly to boil. Reduce to low heat and simmer for 5 minutes, stirring often. Adjust seasonings and thickness. Serve immediately over whole grains, pasta, or potatoes.
